Here are a few tips you can use to prevent food wastage in your restaurant.

Avoid over-buying stock

Stock up on food items and ingredients according to your restaurant's requirements. Overstocking with items you won't use will only lead to wastage, food wastage can also be reduced by properly planned purchasing. Ensure what and how much your business is going to use and rather than buying in bulk stock up only with the necessary quantity. For this, you should consider your past purchase values and get an idea. You can even consider your best sellers, what customers order the most, etc.

 

Ensure proper storage 

Make sure to keep a good watch over your food storage. Storing food under correct conditions, temperatures, and hygiene is very important to prevent your food from spoiling. A good purchase of stock is only helpful if you know how to store them properly. See that your fridges and freezers are working properly, at the right temperatures. Store low-risk products on higher and high-risk products on the lower level. For each category pay attention to the measure needed to store them correctly. Make sure you store food in a way that the food is stored first and used first too.

Keep a regular stock inventory

You should always prepare a stock inventory with a detailed list of all the stocked-up items in your storage areas with their best-before dates to ensure you use them before they are spoiled. Keeping stock inventory also gives you a clear view of your current stock.

Customize your menu and offer different portion sizes

It happens very often that too much food is left on the plates with certain dishes. What you can do is you can provide customizing dishes option and customize your order according to customers' preferences or you can offer different portion sizes of certain dishes, so that the customer orders up the portion that is required.

Ask if customers want to take leftovers home

Most of the time there's food left on the customer's plate, so why not offer them a takeaway of leftovers? Not every food can be managed to be packed for takeaway but you can give your customers an option of leftover takeaways for the ones that can be packed. 

Donate food

If you still have leftovers you can use them up for good cause rather than wasting or throwing them. You can link up with local charities and donate the leftovers to them. You can also contact local food banks, to make sure your food goes to the hands that need it rather than being wasted.
